This dessert is made entirely of organic, all natural ingredients.  It includes a bottom layer of gluten free brownie, a middle layer of sweet cherry spread, a top layer of fluffy whipped topping with organic dark chocolate shavings sprinkled on top.  Make this and enjoy with all the special people in your life.
Gluten Free Brownie Layer:
6 tablespoons butter
1/3 cup tapioca starch or cornstarch
¼ cup unsweetened cocoa powder
10 ounces semisweet chocolate chips
¾ cup cane sugar
1 teaspoon pure vanilla extract
Sweet Cherry Layer:
2 cups pitted cherries
1 tablespoon orange zest
2 tablespoons water
2 tablespoons butter
2 tablespoons pure cane sugar
2 teaspoons tapioca starch or cornstarch
Fluffy whipped topping layer:
1 cup heavy whipping cream
2 tablespoons pure cane sugar
1 teaspoon pure vanilla extract
2 tablespoons chocolate shavings
Brownie Layer
Preheat oven to 350’ and butter an 8” square baking dish.  Melt butter in a saucepan on medium heat.  Once the butter has melted, add the sugar stirring until the sugar granules have dissolved.   Remove from heat and add the chocolate chips stirring frequently.  Add vanilla and then eggs one at a time mixing thoroughly.  Sift in cocoa powder and tapioca starch.  Stir until completely mixed through.  Pour batter into buttered baking dish and smooth top.  Bake until toothpick inserted in center comes out clean, approximately 30 minutes.  Remove from oven and let cool.  
Cherry Layer:
Place cherries in medium saucepan on medium heat.  Add all other ingredients and bring to light boil.  Place heat on low and let simmer for 2-3 minutes.  Remove from heat and pour over cooled brownies smoothing to cover bottom layer.
Whipped Topping Layer:
Pour all ingredients together in mixing bowl.  Mix on high until you get stiff peaks.  Spread over cherry layer covering completely.  Sprinkle chocolate shavings on top.  Enjoy!
